Today I started my official 30-Day Paleo Challenge. Well, I actually started eating a Paleo diet a week ago, but that was because I intended to use the week as my “practice” week, to help me adjust to it. I was afraid I wasn’t going to have any energy, the foods were going to hurt my stomach, and that I was going to be suffering from severe headaches all week, like I have in the past. That wasn’t the case at all. I actually had TONS of energy, didn’t feel any energy crashes, and only had one or two periods of slight headaches! You could say I was WINNING.
I’ve also been supplementing my Paleo foods with my Ultimate Herbalife Nutrition Program, plus their Digestive Health Program. Everything together has been working really well for me! My stomach doesn’t feel bloated and pained from my usual inflamed intestines (I have a soy allergy, gluten allergy, I’m lactose intolerant and I have IBS, so it seems like everything bothers my stomach.)
I think this week I’m going to try eating less sugar (from fruits) as well as a bit less fat, and try to focus on eating more veggies and lean protein. Baby steps! I’m also trying to eat 150g minimum of protein each day and also take progress pics daily. Those will probably be posted at the end of the month. Eek.
I’ve been experimenting with all sorts of different recipes and so far, I’m really liking them! They are very filling as well as delicious 🙂 And super easy to make, just how I like it!
My new favorite recipe this week: Paleo Coconut Crusted Chicken Tenders
These take about 30 minutes to make, total! They are super moist on the inside and sweet and crunchy on the outside. MMMM. 🙂
